White bean chicken soup
White bean chicken soup, also known as "whatever I had in the kitchen" soup is a delicious and healthy recipe that you can make with ingredients you have at home.
Here's what I had:
Ingredients:
1tbsp extra Virgin Olive oil- use less if on a hormone plan.
- 1 yellow onion, sliced
- 5 stalks of celery
- 8 garlic cloves, smashed and diced
- 2 tbsp fresh ginger, peeled and diced
- 4 small purple kohlrabi, peeled and diced
- 1-2 boxes of organic chicken broth (or any broth you prefer)
- A few cups of purified water
- 2 chicken breasts (you can use leftovers or rotisserie chicken or cook chicken breasts in the same pot before the onions go in)
- Glass of @jovialfoods beans (drained and added)
- 1 tsp salt (added with the onion stage and salted again to taste)
- Chili oil (optional)
Instructions:
1. Cut the chicken breasts into small chunks and brown them separately in a pan.
2. In a large pot, sauté the onion, celery, garlic, ginger, and kohlrabi until softened and fragrant.
3. Add the chicken broth and water to the pot and bring to a boil.
4. Add the browned chicken and white beans to the pot.
5. Simmer the soup for 30-40 minutes, until the chicken is cooked through and the vegetables are tender.
6. Add salt to taste and serve hot with a drizzle of chili oil (optional). Enjoy!
