Collards, Chickpeas and lentil soup
From the flavor equation cookbook!
1 cup dried lentils soaked for an hour-( while I prepped)
2Tbsp olive oil
1 medium yellow onion
6 gloves of garlic crushed
2 inches of fresh ginger cleaned and grated
2 Ceylon cinnamon sticks
Black pepper
Sea salt
1 tsp turmeric
1/2 tsp of chili powder
2-3tbsp@of tomato paste
2 bunches of collards or kale- sliced thin
2 cans of chickpeas
1 medium tomato
1 qt veggie stick or chicken
2 tbsp tamarind to finish the dish
I soaked my lentils while I chopped, crushed and measured my other ingredients. I suggest you do the same! I really love the tamarind paste at the end but if you can’t get your hands on it maybe squeeze some fresh lemon juice to give it that tang!
