Navy bean salad

Since getting my kitchen back we have been easing back into fresh cooked bean life. Don’t worry, you can definitely make this with canned beans too. But, if you haven’t tried making fresh beans yet, definitely try it. Fresh beans are super yummy.

Recipe:
1 bag of navy beans soaked overnight. Put in instant pot and cook on high pressure for 10 min and let sit and decompress naturally- about 25 min.

While Beans are cooking chop 1/2 purple onion - put in a bowl and pour boiling water over it to blanch it. This takes the bite away.

Add in 1 large cucumber- cut into bite sized pieces.
5-6 chopped green onions- use white and green parts.

1/4 cup chopped mint
1/4 cup chopped flat leaf Italian parsley of whatever parsley you have on hand.

Dressing:
3-4 tbsp of olive oil- optional.
1/4 cup lemon juice
Sea salt

You can use other spices as well.
