2 cups french lentils or lentils of choice. But, french green hold up nicely.

4 organic carrots,

2 cups cauliflower, asparagus etc cooked and chopped

1 cup peas 

2 tbsp mint chopped

2 tbsp parsly

Squeeze Lemon to taste. 

1/2 teaspoon olive oil. 

Pinch sea salt

Directions: Rinse and clean french lentils. add rinsed lentils to your pot, cover with purified water- about a an inch and a half inch over the lentils. Cook on a low medium heat till soft. About 5 minutes. Drain excess water. 

You can use organic frozen carrots, pea medley. 

Steam or sauté pea, carrot -veggies medley mix. You can add onions and garlic to the bean sauté. If you do, add a smidge of olive oil to warm pan, add sliced yellow onion and 3 gloves of chopped garlic to oil, sauté till soft, add in peans and carrots, cook till soft. About 10 min. 

Mix lentils and medley together. Sea salt to taste. Squeeze some lemon over and add fresh chopped herbs.
