Belgium Chickpea Waffles
1 cups Chickpea Flour (or another bean flour)
1 teaspoon. Baking Powder
1 teaspoon salt
1 TBPS Vanilla
6 eggs
1 cup unsweetened nut milk
Whisk together dry ingredients. Add in vanilla, eggs, and almond milk and whisk until smooth.
Add additional almond milk if needed to get to a desired pourable waffle batter consistency.
Heat waffle iron and cook. Spray iron with cooking spray prior to the first waffle and then as needed
Excellent fresh or warmed in a toaster for a quick protein and fiber-filled breakfast.
Variation: Add a teaspoon of nutmeg to the dry ingredients for a spiced waffle flavor.
Makes approximately 6 waffles.
