Ginger Veggie Soup
Ingredients
1 yellow onion
1 thumb-size fresh ginger
1 head green cabbage
1 head garlic
2 medium chopped carrots
1 cup Green Beans
1 cup cooked chickpeas or can of chickpeas rinsed.
2 1/2 cups mineral or bone broth
Finish w/ a pinch of sea salt-to taste.
Chop up a yellow onion and add to a warm pot, sauté till translucent, then add in diced fresh ginger and let simmer together. Chop carrots, green cabbage, and green beans and mix in with onion, ginger mixture in the hot pan. Salt. Add chicken bone broth and water, let simmer more. Add in fresh Chickpeas ( if you have) and simmer. After 2 min. Ready to eat! Enjoy! (otherwise, a can rinsed and drained works) You can also leave out. Add 1 cup fresh water more for a brothy soup.

CHICKPEAS (Cicer arietinum) also referred to as a garbanzo bean. Chickpeas are an excellent source of Soluble fiber, molybdenum, folic acid, fiber, and manganese. They also contain protein (incomplete) iron, magnesium, and zinc. So pretty much one of your body’s best friends. Molybdenum is a trace mineral and used by the body to help detoxify sulfates, among other benefits.
CABBAGE is a nutritionally dense low-calorie food (hallelujah). An excellent source of vitamin C, potassium, folic acid, vitamin B6, biotin, calcium, magnesium, and manganese. Wha?! And if that wasn’t enough, this beaut also is full of phytochemical a potent anti-cancer compound.
Garlic: (Allium sativum- lily family) Garlic is a natural immune system enhancer and an essential endocrine system nutrient. It helps maintain healthy levels of blood sugar, which assists the pancreas in generating correct amounts of insulin. High in adrenal supporting vitamins and minerals Selenium, Vitamin C, B6, Copper, Manganese, and potassium. This badass also helps the body eliminate unwelcome guests in the body, think viruses, mold, etc. Garlic breath ain’t so bad after all.
