Perfectly Cooked Lentils

Ingredients:
1 cup dry lentils of any type/color
½ tsp sea salt
1 bay leaf (optional)
1 large garlic clove, peeled (optional)
Directions:
Fill a medium to large saucepan ¾ of the way with water. Bring to a boil over high heat.
Meanwhile, pour lentils on a clean kitchen towel and carefully sort through for any little rocks or pieces of debris that need to be removed. Rinse lentils.
Once water is boiling, add the lentils, salt, garlic and bay leaf. Reduce heat as necessary to prevent overflow while still maintaining a boil.
Cook red lentils for 6 minutes, green lentils for 13 minutes, black lentils for 16 minutes, and French lentils for 18 minutes. You’ll know your lentils are done when they are tender but not mushy or falling apart.
Once cooked, immediately strain lentils and discard bay leaf and garlic. Enjoy with a squeeze of lemon and salt to taste or add to a salad.
