Marinated Cannellini Beans

Ingredients: 

  • 1 shallot, finely diced

  • 4 tbsp red wine vinegar OR fresh lemon juice 

  • 4 cups cooked cannellini beans OR 2 16oz cans, drained and rinsed 

  • 1 clove garlic, minced 

  • ½ cup combination of fresh parsley, dill & cilantro, finely chopped 

  • 2 tsp olive oil 

  • Sea salt, to taste 

Directions: 

  1. In a small bowl, combine the red wine vinegar and the shallots. Let sit for 5 minutes. 

  2. In a medium sized bowl, combine the beans, garlic, herbs, and olive oil. 

  3. Add the vinegar shallot mixture to the bean mixture and combine. Add salt to taste. 

  4. Let the mixture marinate for about 30 mins in the fridge before serving.
