Black Bean Dish with Fresh Ginger
To make this flavorful and nutritious black bean dish:
Prepare the Beans:
Soak 2 cups of dried black beans overnight.
Rinse the soaked beans and cook them in an instant pot on high pressure for 11 minutes.
Let the pressure release naturally for 30 minutes or until the top opens.
Alternatively, you can use canned black beans.
Add Aromatics:
Smash 5-8 garlic cloves.
Peel and chop 3 tbsp of fresh ginger.
Sauté:
Sauté the ginger and garlic in olive oil for a few minutes until fragrant.
Add the cooked black beans and mix well to distribute the aromatics evenly.
Season:
Add 1/4 cup or more of organic gluten-free tamari or soy sauce.
Adjust the amount of soy sauce to taste.
Add water if needed to achieve the desired consistency.
Simmer:
Add cleaned chili peppers if you like (optional).
Simmer the mixture for 5 minutes with the top on and on sauté mode.
Serve and Enjoy:
Serve the delicious black beans hot.
