A note from Linsey.

So, where to begin? Lol. The best place to start is in the fall of 2019. Although I did repurchase some organic items then, I was your regular "Standard American diet" eater. Starbucks, Pizza Hut, Chick-fil-A, and drinking 5-7 cups of coffee daily! In my twenties, I developed panic attacks, migraines, bloated all the time, terrible period cramps, etc. That fall, I came down with symptoms that I initially thought were a bad stomach bug, nausea, stomach cramps, and loose bowels. As the weeks went on, I noticed that it was food-induced. I also started having radiating pain up my back and into my shoulder blades. After some research, I realized I probably had gallbladder issues and made an appointment with my doctor. She ordered a gallbladder ultrasound, and sure enough, I had gallbladder sludge and a few stones. My first question to her was, what can I do to eliminate this? Her response: nothing. She referred me to a surgeon and sent me on my way.

My mom had had her gallbladder out a few years before this and was still struggling with nasty digestive issues. That info, coupled with my fear of medicine/surgery, spurred me to spend hours researching. I finally concluded that I could heal, and this doctor was ignorant of what the body was capable of.

For the next 8-10 months, I struggled trying to figure out what was going to make my body happy. I was in almost constant abdominal and back pain, sometimes not being able to stand straight up because of the pain. I thought I was eating "healthy," but with gallbladder issues, things like nuts, coconut yogurt, sunflower butter, fatty meat, etc. These items were just too much for me. I felt so frustrated at my body for not being able to eat what I thought was "healthy."

Fast-forward to November 2020. I heard you talking about beans, and everything seemed to make sense. I immediately searched Karen and learned her story as well. I felt like you ladies had the info I needed but hadn't come across until then. I cut out all processed foods, caffeine, sugar, and grains and started eating beans (which I completely fell in love with, and they've become a total comfort food for me).

I started journaling my food and symptoms and learned what my body needed to feel good and her limits. I began meditating, listening to things like Louise Hay and Abraham Hicks daily. I also started using castor oil packs, which helped considerably. I had been on protocol for about three months when I learned I was pregnant with my third.

Initially, I was terrified. I knew that pregnancy hormones could play a massive role in the cholesterol deposits that lead to gallstones, and I didn't know if my gallbladder was up for it yet. At my first midwife appointment, I also learned that I had Hashimoto's, which made sense with a lot of the symptoms I had had before protocol. I lived off of black beans and salsa for the first few months of pregnancy. It became a household joke, but I believe it got me through! My pregnancy was perfect. I continued on with my protocol; I added organic oats after a while. Towards the end of my pregnancy, the baby would get into positions that would irritate my gallbladder, but it was never pain that lasted. I ended up going 10 days past my due date (and still felt amazing and was waking every day), and in November of 2021, I had a very peaceful, unmediated water birth. The day after she was born, I remember crying tears of joy, so proud of myself and my body and what we had done. A few months postpartum I had another gallbladder ultrasound, and all gallbladder sludge and stones were gone :) It healed through pregnancy and all!

It's been almost 4 years, and I'm still eating beans daily and giving my body what it needs. I've also healed my Hashimoto's and have been off medication for over a year. I've learned to love and respect my body's sensitivities and no longer see them as a weakness. I went from letting my fear and thoughts run my life to telling myself every day how wonderful and amazing I am—just being truly grateful and finding joy in the simplicity of eating the way we were meant to eat.
