Instant Bean Salad
This is a breakfast favorite in my home.
We like to add a 7 min egg on top and call it breakfast.
Ingredients.
3 Shallots chopped or purple onions- about 1 cup all in.
1 bunch curly parsley- about 1/2 cup all in (I like more)
1-2tbsp olive oil
1 tbsp apple cider v or red wine vinegar.
Pinch of salt
How we do it.
Add the shallots chopped into a bowl and blanch them!
Blanch wha? Yep, all you do is add the shallots into a bowl, pour boiling water over, and let it sit for 3-5 minutes. Try them and if the bite is mellow, drain and add into a clean bowl. Let cool.
Wash that bunch of curly parsley and then clip the tips and chop up! I like to use pair of kitchen scissors.
Once shallots/onions are cooled, add in chopped parsley and olive oil, apple cider V or red wine V
Pinch of salt. mix, and taste. add more or less for your palate.
NOTE: If on a severe hormonal plan, use less evoo, but it’s usually not that much fat once you combine it with your beans. I put this in a glass container and add to my breakfast beans till I run out :) You can also add in other herbs and spices. I sometimes add fresh tomatoes and avocado. This mix can be added to whatever simple bean you have on hand or a canned bean!
